Molten chocolate lava cakes are a popular dessert that combine the elements of a chocolate cake and a soufflé. Its name comes from the dessert’s liquid chocolate center.  These mini cakes topped with a piece of peppermint bark have become a traditional Christmas Eve dessert at my house.  While they look and taste very decadent they are actually very easy to make and have the added bonus of being a great do ahead recipe.

You will need some cooking spray and six glass or ceramic ramekins as pictured pictured.  They are available at Target, Amazon and Bed Bath & Beyond.
